When replying to a post, there is a button in the lower right corner just below the post that says "Reply With Quote." When you click that, you will see somthing like this:

Hey there Sam!
You are a jerk.
I guess you are glad you can edit anything you like when you respond to my post, eh?
Have a nice day,
Fred.
[/quote]
You then could delete any part of Fred's comment that you didn't want to reply to, and type your response below the "quote" tag between square brackets:
[quote=Fred]
Hey there Sam!
You are a XXX.
I guess you are glad you can edit anything you like when you respond to my post, eh?
Have a nice day,
Fred.

You can have quotes within quotes as much as you like, though it's rarely a good idea to have more than two. For example, is Fred wanted to reply to Sam and include his original post, then he would write this in the edit box:
[quote=Sam]
[quote=Fred]
Hey there Sam!
